Anyone with a successful recipe? I've checked the internet and some call for added liquid and some don't. I've had an occasional problem with jars breaking while canning jalapenos. ( forgot the brine on some) It worries me that I could get breakage without the liquid. Peppers are cheap but venison is harder to come by. Dick

I'm 45 years old, and my mom and dad have been canning ever since I can remember. When me or my dad kill a deer we usally end up canning quite a bit of the meat. Here's the way my parents and me have done for years.

Cut meat in fairly small chunks, 1-1 1/2 inches.
Add a 1 tsp of canning salt in jar and pack jar to the neck with meat.
DO NOT add any water to jar.
We put 2 qts water in the 7 qt canner
Get all the air out of your canner before putting on your jiggler
Cook for 75 minutes after you reach and maintain 10 lbs pressure

If you don't get all the air out of the canner, the jars can move around and may break.
Let the steam come out steady for a minute or two before you put on the jiggler and see if that helps with your jars breaking. Make sure yours jars are evenly spaced and not touching. The meat will make its own juice, usually at least half a jar full. Deer meat canned this way will melt in your mouth. Tastes just like roast beef to me. BTW, some people add garlic, onions, etc., I like it best plain. Pressure cooking seems to get rid of alot of the gamey taste that most try to cover up with added ingrediants. This has worked for our family for many years, give it a try. Good luck.

I and the wife have been canning deer and pork for years, pretty much like Reaper states above, we add a little water to cover and seal the top. We cook for 90 minutes in a pressure canner, 11#. Like he says, taste like great roast beef. We have also canned chicken on sale, and it is great! You can also fill up any voids with BBQ sauce, with some crushed garlic, and man, you talk about instant BBQ sandwiches for a easy meal after working all day. I gave Jeff Roark some canned deer last spring when he was over, he really liked it.

I kid you not, the canned venison Sam gave me was the best venison I have had, bar none. Like Sam told me when he gave it to me, that you can fix it anyway you want and to the taste you want. The possibilities are endless.

I'd love to have 2 young does canned. You hear me Sam? hehehe...

Jeff old buddy I am in bad shape tongiht, eat about a 1# elkburger as I type this, with a baked potato and salad, am about to bust, may not make it. If I do, I have another one packed for my lunch tommorow, oh the agony! LOL!

Ya Reaper Nailed it. So Easy even I can do it.
I put a slice of good bacon in with mine last year but did not like it! Do it just like Reaper said. It's the best!!

I do it just like Reaper, except that I add water and cook it for 90 minutes on 10#. Probably don't have to, but it works for me. I do reccommend using wide mouth jars as it gets pretty hard to get out with a regular mouth jar. When it first comes out of the jar it doesn't look too pretty (or smell good for that matter), but just add some garlic, onions, potatoes, carrotts, celery and a bit more water and you have the makings of a good quick and easy stew that anyone will love.

The pic is not so good, but here is what a quart looks like canned with no water added. We canned 28 quarts the last few days, a spike buck and a fat doe.

Scored me a canner and got all the parts & tools together to give this a whirl.

Gotta get out this weekend and kill some deer!

Wife killed a cowhorn spike in our gunseason yesterday, did 2 cannings today 2-3 tommmorw to finish up! If Jeff Roark sees this he will be here shortly! LOL!
