How do you get a leather grip cover good and tight? Do you wet the leather, sew it together, then let it shrink, or do you cut the leather short of touching, and pull it together while sewing?

What type of leather are you using, Brad?
With softer buckskin type leather, I've used contact cement and then stitched/laced the back.
With a stiffer type, I've wet formed it first, then a little contact cement and lacing.
You may not want to cement the full surface if you think you may remove it later.

Ive got a bunch of small pieces of leather from a saddle shop. It's all pretty heavy, I'll have to pick out a thinner piece or scrape/sand it down. I'll wet form it. Thanks for the info. If I run into a problem, I'll give you a shout.
