Call me simple but cotton tails roasted in those sealed oven bags with salt and pepper is perfect for me. Moist and tender and delectable!

I like simple too...

I remove the legs and the loins. Then I make a stock with the ribs and back bones, onions, celery and carrots, peppercorns, whole clove, allspice and herbs.
Simmer it a long time and strain it. Reserve the bones if you want to pick any of the leftover meat off to put in the sauce or sides, etc.

Then, season the legs with salt & pepper and sear them in olive oil in an oven safe pan, iron skillets work great. Add the stock some garlic cloves and a few sprigs of thyme. Put in a slow oven. Maybe around 325* Fahrenheit. When there done, keep warm. Season and pan sear the loins to about medium. Let rest and slice on a bias. Serve it over some wild rice or mashed potatoes with some collards or beet tops. Make sure to use the braising fluid to make your sauce. It can be gravy or something finer. Sounds a lot harder then it is! It's basically just a technique that you can make your own.

Simmer bone in rabbit pieces in milk for 20 minutes. Remove from milk. Baste in BBQ sauce and grill over charcoal for 10 minutes or less. Do not cook long enough that it gets dry.
