Lazy Man's 'Stuffed' Peppers
Everybody loves stuffed green peppers, but they're a fair amount of work to prepare - coring, stuffing, baking yadayada. And who wants to sit around, after a hard, cold days hunt, waiting for the oven? Assuming you even HAVE an oven handy, something a lot of deer camps lack.
Being lazy, and not over fond of ovens, I came up with this easy way to make peppers. This is a healthy stick-to-your-ribs meal that takes a skillet and a sauce pan; no baking dishes required.
The 'stuffing' is not prepared and then shoved into a hollowed out pepper. Instead, I boil water, toss in peppers cut into bite-size pieces, bring back to a boil, and fill with 'minute' rice. Figure one pepper per person. Remove from the stove, cover and set aside to 'cook'.
While the water is coming to a boil, fry up some hamburger, sausage or combination, drain the grease, lower the heat and add spaghetti sauce from a jar. Bring to a slow simmer. (What we're doing here is actually making a quick-and-dirty meaty spaghetti sauce.)
I like this dish fairly garlicky, so that's what i look for in jars, but any sauce you prefer will work fine.
When the sauce is ready, serve over the rice-and-peppers. Serve shreeded cheese for a topping, and a cold drink. Simple and goof-proof.
I've also made this with chicken instead of beef, and even left-over turkey. Once I even cut up some left-over pork chops and heated that in the sauce. Tasted just fine. For deer camp, ground venison or deer sausage is perfect.
This dish will take about 15-20 minutes to make, and the peppers don't turn to mush like they can in an oven.
